Classic Basil Pesto

Vibrant, fresh basil pesto in minutes - toss it through pasta, spread on bread, or spoon over everything.

Ingredients

  • 60 g fresh basil
  • 40 g pine nuts
  • 40 g parmesan
  • 1 clove garlic
  • 100 ml olive oil

Instructions

  1. Blanch basil 10 seconds, then shock in ice water and dry.
  2. Blend basil, pine nuts, parmesan and garlic.
  3. Stream in olive oil and pulse to a coarse paste.
  4. Season and use right away or store with a film of oil on top.

💡 Chef's tip

Add the olive oil in a slow stream at the end and pulse, not puree - over-blending heats and bruises the basil.

Briefly blanching the basil leaves before blending sets their bright green color, so the pesto stays vivid instead of oxidizing to a dull khaki.
