Chicken Tikka Masala

Tender chicken in a rich, spiced tomato-cream sauce - the takeout favorite you can make better at home.

Ingredients

  • 700 g chicken thighs, cubed
  • 150 g yogurt
  • 400 g tomato puree
  • 100 ml heavy cream
  • 2 tbsp garam masala

Instructions

  1. Marinate chicken in yogurt and half the spices 20 minutes.
  2. Sear until charred, then set aside.
  3. Cook onion, garlic and remaining spices; add tomato puree.
  4. Return chicken, stir in cream and simmer 10 minutes.

💡 Chef's tip

Char the chicken pieces hard before adding the sauce - those browned edges give the dish its smoky depth.

Marinating the chicken in yogurt and spices before searing both tenderizes the meat and builds the first layer of flavor that the sauce is later built around.
