Ingredients
- 700 g chicken thighs
- 400 g tomato puree
- 60 g butter
- 100 ml cream
- 2 tbsp garam masala
Instructions
- Sear spiced chicken until browned; set aside.
- Simmer tomato puree with spices, then blend smooth.
- Return chicken, stir in cream and simmer 10 minutes.
- Swirl in cold butter off the heat and serve with naan.
💡 Chef's tip
Blend the sauce smooth before returning the chicken - that silky texture is the hallmark of a good butter chicken.
Finishing the sauce with cold butter swirled in off the heat (mounting) gives butter chicken its signature glossy richness that simply adding cream cannot.
