Ingredients

  • 1 head romaine lettuce
  • 300 g cooked chicken breast
  • 4 tbsp caesar dressing
  • 40 g parmesan
  • 1 cup croutons

Instructions

  1. Season 2 boneless chicken breasts with salt, pepper, and a little oil, then grill or pan sear over medium high heat for 5 to 6 minutes per side until they reach 75C (165F) inside.
  2. Let the chicken rest for 5 minutes, then slice it into thin strips so it stays juicy.
  3. Wash and dry 2 romaine hearts thoroughly, then chop or tear the leaves into bite sized pieces.
  4. In a large bowl whisk together Caesar dressing made from mayonnaise, anchovy, garlic, lemon, and Parmesan until smooth.
  5. Add the romaine to the bowl and toss gently until each leaf is lightly coated with dressing.
  6. Divide the salad between two plates and top with the sliced chicken and a handful of crunchy croutons.
  7. Finish with generous shavings of Parmesan and a crack of black pepper, then serve right away while crisp.

💡 Chef's tip

Toss the romaine with the dressing in batches and only as much as you need, because too much dressing weighs the leaves down and makes them go limp quickly.
