Stuffed Chicken Breast
Juicy chicken breast pocketed with melty cheese and spinach makes an impressive yet easy dinner. It looks restaurant-worthy but comes together with simple ingredients. Searing then baking keeps the outside golden and the inside tender.

Ingredients
- 2 large chicken breasts
- 100 g cream cheese
- 2 cups spinach
- 60 g mozzarella
- 2 cloves garlic
Instructions
- Heat the oven to 200C (400F).
- Mix the cream cheese, wilted spinach, mozzarella, and garlic into a filling.
- Cut a deep pocket into the side of each chicken breast.
- Stuff with the filling and secure with toothpicks.
- Season the outside and sear in an ovenproof pan until golden on both sides.
- Transfer to the oven and bake 15 to 18 minutes until cooked through.
- Rest 5 minutes, remove the toothpicks, and serve.
💡 Chef's tip
Secure the opening with a couple of toothpicks so the cheesy filling stays inside rather than leaking out during cooking.
Searing the stuffed breast first to set a golden crust, then finishing it in the oven, cooks it through evenly without drying out the lean meat.
