Stuffed Chicken Breast

Juicy chicken breast pocketed with melty cheese and spinach makes an impressive yet easy dinner. It looks restaurant-worthy but comes together with simple ingredients. Searing then baking keeps the outside golden and the inside tender.

Ingredients

  • 2 large chicken breasts
  • 100 g cream cheese
  • 2 cups spinach
  • 60 g mozzarella
  • 2 cloves garlic

Instructions

  1. Heat the oven to 200C (400F).
  2. Mix the cream cheese, wilted spinach, mozzarella, and garlic into a filling.
  3. Cut a deep pocket into the side of each chicken breast.
  4. Stuff with the filling and secure with toothpicks.
  5. Season the outside and sear in an ovenproof pan until golden on both sides.
  6. Transfer to the oven and bake 15 to 18 minutes until cooked through.
  7. Rest 5 minutes, remove the toothpicks, and serve.

💡 Chef's tip

Secure the opening with a couple of toothpicks so the cheesy filling stays inside rather than leaking out during cooking.

Searing the stuffed breast first to set a golden crust, then finishing it in the oven, cooks it through evenly without drying out the lean meat.
