Palak Paneer

Palak paneer is a beloved Indian dish of soft paneer cheese in a silky, vibrant spinach sauce. It is rich and comforting yet packed with greens, and it comes together faster than you might expect. Serve it with warm naan or rice for a satisfying vegetarian dinner.

Ingredients

  • 400 g spinach
  • 250 g paneer
  • 1 each onion and tomato
  • 1 tbsp each garlic and ginger
  • 1 tbsp garam masala

Instructions

  1. Blanch the spinach for 1 minute, then transfer to cold water to keep it bright green.
  2. Blend the cooled spinach into a smooth puree and set aside.
  3. Pan-fry the paneer cubes in a little oil until lightly golden, then remove.
  4. Saute onion, garlic, and ginger until soft, then add chopped tomato and the spices.
  5. Cook until the mixture turns into a thick fragrant base.
  6. Stir in the spinach puree and a splash of water and simmer 5 minutes.
  7. Fold in the paneer and a spoon of cream, then warm through.
  8. Serve hot with naan or rice.

💡 Chef's tip

Lightly pan-fry the paneer cubes before adding them so they hold their shape and pick up a golden edge in the sauce.

Blanching the spinach briefly and then shocking it in cold water locks in the bright green color, so the sauce stays vivid instead of turning a dull army green.
