Ingredients

  • 4 cups cabbage, shredded
  • 1 cup flour
  • 3 eggs

  • 4 green onions

Instructions

  1. Whisk the flour, eggs, and dashi into a batter.
  2. Fold in the shredded cabbage and green onions until well coated.
  3. Heat oil in a skillet and add the mixture, shaping it into a thick round.
  4. Cook for 5 minutes until golden, then flip carefully and cook 5 minutes more.
  5. Transfer to a plate.
  6. Drizzle with okonomiyaki sauce and mayo, then top with bonito flakes and serve.

Resist pressing the pancake flat as it cooks; keeping it thick lets the cabbage steam through while the outside crisps.
