Hearty Lentil Soup

Ingredients
- 300 g brown lentils
- 2 carrots
- 1 onion
- 400 g diced tomatoes
- 1.2 L vegetable broth
Instructions
- Saute onion, carrot and celery until soft.
- Add lentils, tomatoes and broth.
- Simmer 30 minutes until lentils are tender.
- Season, then finish with a splash of lemon.
💡 Chef's tip
Do not salt the lentils until they are tender - salting early can keep them firm and slow to cook.
A splash of vinegar or lemon stirred in at the end brightens the earthy lentils and makes the whole pot taste more vivid and balanced.
