Instant Pot Ribs
Instant Pot ribs are fall-off-the-bone tender in about an hour, then finished with a sticky barbecue glaze under the broiler. Pressure cooking delivers the tenderness of all-day smoking in a fraction of the time. They are a shortcut to incredible ribs any night of the week.

Ingredients
- 1.5 kg pork ribs, in sections
- 1.5 cups barbecue sauce
- 1/4 cup apple cider vinegar
- 1 cup water
- 2 tbsp brown sugar
- 1 tbsp paprika
- 1 tbsp garlic powder
Instructions
- Remove the membrane from the ribs and rub them with the paprika, garlic powder, brown sugar, salt, and pepper.
- Pour the water and vinegar into the Instant Pot and set the ribs on the trivet.
- Seal and pressure cook on high for 25 minutes, then natural release for 10 minutes.
- Carefully transfer the ribs to a foil-lined tray.
- Brush generously with barbecue sauce.
- Broil for 5 minutes until sticky and caramelized, then serve.
💡 Chef's tip
Remove the thin membrane from the back of the ribs before cooking; it blocks flavor and turns rubbery if left on.
Pressure cooking the ribs first melts the tough connective tissue to fork-tender, then a quick broil caramelizes the sauce for the charred finish smoking would give.
