Broccoli Cheddar Soup

Ingredients

  • 500 g broccoli
  • 250 g sharp cheddar
  • 1 each onion and carrot
  • 3 tbsp each butter and flour
  • 1 L total milk and broth

Instructions

  1. Saute the onion and carrot in butter until soft.
  2. Stir in the flour and cook 1 minute, then whisk in the broth and milk.
  3. Add the broccoli florets and simmer until tender, about 10 minutes.
  4. Lightly mash or partly blend, leaving some texture.
  5. Off the heat, stir in the grated cheddar a handful at a time until melted and smooth.
  6. Season and serve hot, ideally in a bread bowl.

Leave some of the broccoli in small pieces rather than blending it all, so the soup has a pleasant texture.
