Ingredients
- 500 g broccoli
- 250 g sharp cheddar
- 1 each onion and carrot
- 3 tbsp each butter and flour
- 1 L total milk and broth
Instructions
- Saute the onion and carrot in butter until soft.
- Stir in the flour and cook 1 minute, then whisk in the broth and milk.
- Add the broccoli florets and simmer until tender, about 10 minutes.
- Lightly mash or partly blend, leaving some texture.
- Off the heat, stir in the grated cheddar a handful at a time until melted and smooth.
- Season and serve hot, ideally in a bread bowl.
