Ingredients
- 200 g block feta cheese
- 500 g cherry tomatoes
- 400 g pasta
- 3 cloves garlic
- 4 tbsp olive oil
Instructions
- Heat the oven to 200C (400F).
- Place the cherry tomatoes and whole garlic cloves in a baking dish and nestle the block of feta in the center.
- Drizzle everything generously with olive oil and season.
- Bake for 30 minutes until the tomatoes burst and the feta is soft and golden at the edges.
- Meanwhile cook the pasta until al dente, reserving some cooking water.
- Mash and stir the roasted feta and tomatoes into a creamy sauce.
- Toss the pasta through with a little pasta water until coated, then finish with fresh basil.
💡 Chef's tip
Reserve some pasta water to loosen the sauce, since the roasted feta and tomato mixture thickens quickly once stirred through the pasta.
Roasting the tomatoes until they burst and caramelize concentrates their sweetness, which balances the salty feta into a naturally creamy sauce with no cream at all.
