Ingredients

  • 1/2 small watermelon
  • 150 g feta cheese
  • a handful fresh mint
  • to drizzle balsamic glaze
  • 1 tbsp olive oil

Instructions

  1. Cut the watermelon into bite-size cubes, removing any seeds.
  2. Crumble or cube the feta.
  3. Arrange the watermelon and feta on a platter.
  4. Scatter torn mint leaves over the top.
  5. Drizzle with olive oil and balsamic glaze.
  6. Finish with a tiny pinch of flaky salt and serve immediately.

💡 Chef's tip

Assemble it just before serving, since watermelon releases a lot of juice and the salad turns watery if it sits too long.
