Stovetop Fried Rice

Better-than-takeout fried rice in 15 minutes - the perfect way to turn yesterday's rice into tonight's dinner.

Ingredients

  • 4 cups cold cooked rice
  • 2 eggs
  • 1 cup frozen peas and carrots
  • 3 tbsp soy sauce
  • 3 green onion

Instructions

  1. Scramble the eggs in a hot oiled pan, then set aside.
  2. Stir-fry the vegetables 2 minutes.
  3. Add the cold rice and soy sauce; fry hard 3-4 minutes.
  4. Fold in egg and green onion and serve.
