Grilled Vegetable Skewers

Colorful, charred vegetable skewers with a simple herb oil - the side dish that steals the cookout.

Ingredients

  • 2 zucchini
  • 2 bell peppers
  • 1 red onion
  • 12 cherry tomatoes
  • 3 tbsp olive oil

Instructions

  1. Cut vegetables into even chunks and toss with oil, herbs and salt.
  2. Thread onto soaked skewers, grouping by type.
  3. Grill over medium-high heat, turning, 10-12 minutes.
  4. Finish with a squeeze of lemon.

💡 Chef's tip

Soak wooden skewers in water for 15 minutes first so they do not catch fire on the grill.

Grouping the same vegetable on each skewer (rather than mixing) lets you pull each type at its perfect doneness, since peppers and zucchini cook far faster than onions.
