Classic French Toast

Classic French Toast

Classic French toast turns simple bread into a golden custardy breakfast treat with crisp edges and a soft tender center. Each slice is soaked in a sweet vanilla cinnamon batter and griddled until beautifully browned. Serve it stacked high with maple syrup, butter, and a dusting of powdered sugar.

Ingredients

  • 4 slices thick bread
  • 2 eggs
  • 120 ml milk
  • 1 tsp cinnamon
  • 1 tbsp butter

Instructions

  1. In a shallow dish whisk together 4 eggs, 1 cup of milk, 2 teaspoons of vanilla, 1 teaspoon of cinnamon, and a pinch of salt until fully combined.
  2. Heat a griddle or large skillet over medium heat, about 175C (350F), and melt a knob of butter to coat the surface.
  3. Dip each slice of thick bread into the custard for about 20 seconds per side, letting it absorb the liquid without becoming soggy.
  4. Lift the bread and let excess custard drip off, then lay it on the hot griddle.
  5. Cook for 3 to 4 minutes until the underside is golden brown, then flip and cook the second side another 3 minutes.
  6. Keep finished slices warm in a low oven while you cook the rest, adding more butter to the pan as needed.
  7. Serve hot, topped with maple syrup, a pat of butter, and a dusting of powdered sugar.

💡 Chef's tip

Use thick slices of day old or slightly stale bread, because drier bread soaks up the custard without falling apart into a soggy mess.

Slightly stale, thick-cut bread is ideal: it soaks up the custard without falling apart, where fresh soft bread turns soggy and tears.
