Classic French Toast
Classic French toast turns simple bread into a golden custardy breakfast treat with crisp edges and a soft tender center. Each slice is soaked in a sweet vanilla cinnamon batter and griddled until beautifully browned. Serve it stacked high with maple syrup, butter, and a dusting of powdered sugar.

Ingredients
- 4 slices thick bread
- 2 eggs
- 120 ml milk
- 1 tsp cinnamon
- 1 tbsp butter
Instructions
- In a shallow dish whisk together 4 eggs, 1 cup of milk, 2 teaspoons of vanilla, 1 teaspoon of cinnamon, and a pinch of salt until fully combined.
- Heat a griddle or large skillet over medium heat, about 175C (350F), and melt a knob of butter to coat the surface.
- Dip each slice of thick bread into the custard for about 20 seconds per side, letting it absorb the liquid without becoming soggy.
- Lift the bread and let excess custard drip off, then lay it on the hot griddle.
- Cook for 3 to 4 minutes until the underside is golden brown, then flip and cook the second side another 3 minutes.
- Keep finished slices warm in a low oven while you cook the rest, adding more butter to the pan as needed.
- Serve hot, topped with maple syrup, a pat of butter, and a dusting of powdered sugar.
💡 Chef's tip
Use thick slices of day old or slightly stale bread, because drier bread soaks up the custard without falling apart into a soggy mess.
Slightly stale, thick-cut bread is ideal: it soaks up the custard without falling apart, where fresh soft bread turns soggy and tears.
