Ingredients

  • 200 g flour
  • 250 ml milk
  • 1 egg
  • 2 tsp baking powder
  • 2 tbsp sugar

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt so the leavening is evenly distributed.
  2. In a separate bowl, beat the eggs with the milk and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently just until combined, leaving small lumps so the pancakes stay light.
  4. Let the batter rest for about 5 minutes, which allows the baking powder to activate and the flour to hydrate for a fluffier result.
  5. Heat a nonstick pan or griddle over medium heat, around 175C (350F), and lightly grease it with butter.
  6. Pour about a quarter cup of batter per pancake and cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes.
  7. Flip each pancake and cook the second side for 1 to 2 minutes until golden brown and cooked through.
  8. Stack the pancakes on a plate, top with butter and maple syrup, and serve warm.

Do not overmix the batter, because a few lumps are fine and overworking it develops gluten that makes the pancakes tough instead of fluffy.

Letting the batter rest 5 minutes before cooking lets the flour hydrate and the leavening start working, which is the real secret to thick, fluffy pancakes.
