Ingredients

  • 200 g flour
  • 250 ml milk
  • 1 egg
  • 2 tsp baking powder
  • 2 tbsp sugar

Instructions

  1. Whisk dry ingredients, then stir in milk and egg until just combined.
  2. Rest the batter 5 minutes.
  3. Cook scoops on a greased pan over medium heat.
  4. Flip when bubbles pop; cook 1 more minute.

💡 Chef's tip

Flip only once, when bubbles form and pop across the surface - pressing or re-flipping deflates them.

Letting the batter rest 5 minutes before cooking lets the flour hydrate and the leavening start working, which is the real secret to thick, fluffy pancakes.
