Fattoush Salad

Fattoush Salad

Fattoush is a vibrant Levantine salad of crisp vegetables and toasted pita tossed in a tangy sumac dressing. The crunchy pita chips and bright, lemony dressing make it refreshing and satisfying. It is a colorful, healthy side for any Middle Eastern meal.

Ingredients

  • 2 pita bread, toasted
  • 4 cups romaine, chopped
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 4 radishes, sliced
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • 1 tbsp sumac

Instructions

  1. Toast or bake the pita until crisp, then break into pieces.
  2. Whisk the olive oil, lemon juice, sumac, salt, and pepper into a dressing.
  3. Combine the romaine, cucumber, tomatoes, and radishes in a bowl.
  4. Add the fresh herbs.
  5. Toss the vegetables with the dressing.
  6. Add the toasted pita just before serving and toss lightly.

💡 Chef's tip

Add the toasted pita just before serving so it stays crisp rather than going soggy in the dressing.

Sumac is the signature ingredient, lending a distinctive tart, lemony flavor that sets fattoush apart from other chopped salads.
